150 fresh beef samples packaged in the Darfresh System were collected. Seventy five samples corresponded to organically reared cattle beefsteak samples and seventy five conventionally reared cattle beefsteak samples. In the case of organic beef, animals came from farms certrified as organic by an official agency at least two years before the initiation of this study. All samples came from animals that were slaughtered, quartered and packaged in the same slaughterhouse and quartering room, by the same factory personnel.

25 gram portions were obtained from each beef sample.
